Hello guys! Are you tired of preparing the same ol' Adobo or Tinola for your chicken? In this post I will show you my grandma's recipe for Chicken Rice, or for a more familiar term, Hainanese Chicken. I used to eat Hainanese Chicken even before restaurants dedicated to this meal became popular. We would always have these weekends where my Lola would prepare this meal for no occasion, and it was our way for our family to bond and eat together. If you want a meal that's (relatively easy) to prepare, or impress your visitors with a unique meal, then read on to find out how to make Hainanese Chicken.
Ingredients:
1 Whole chicken (Adobo Cut), or 4-6 pieces quarter leg chicken, cleaned
1-2 pieces medium sized Cucumber
1/2 Onion
3 pieces Finger Chili (Sili Sigang)
1 medium sized Ginger
Soy Sauce
1/4 pack sesame seeds
(Not displayed) 4 cups rice, washed
Serves 4-6 people
Procedure:
1. Start by looking for a medium sized pot to boil your chicken. Make sure that all the chicken fits inside the pot. Fill the pot with 1/2 of its volume with drinkable water. You will use this to boil the chicken and make the broth for the rice.2. Skin your onion and ginger and cut them into medium sized pieces show above. Make sure to skin them for better flavor absorption and to prevent the dirt from the skin to get in the broth.
3. Place the chicken, onion and ginger in the pot of water, and place a tablespoon of sesame oil in the mixture and bring it to a boil as below:
4. While waiting for your chicken to cook, prepare your cucumber side by peeling and cutting them into cubes or round pieces such as this:
4. In a separate pan, also toast the sesame seeds until they turn light brown as shown below. Do not over-toast to prevent the sesame seeds from tasting bitter. Set aside.
4. If your chicken is cooked, place them in a separate bowl and set aside, do not discard the broth. You will use this to cook your rice. Drizzle some sesame oil (but not too much) on your chicken and sprinkle half of your toasted sesame seeds. Set aside the half of your toasted sesame seeds for the sauce.
4. Prepare your rice by washing them once and placing the broth instead of plain water, such as shown below. Make sure that you use the appropriate amount of broth for the rice (double the height of the rice in your rice cooker) so that the rice won't be too soggy or dry. If your rice is cooked, it will look something like the right picture:
5. Prepare the sauce by cutting your finger chili into round pieces shown below, adding the toasted sesame seeds, and placing a teaspoon of sesame oil, and 2 tablespoons of soy sauce. Make sure to make at least 2-3 sauce bowls for sharing as you will frequently use the sauce for this dish. The sauce is what gives this meal the distinct 'Hainanese' flavor.
6. All done and ready to serve with your steaming Hainanese Rice.
